Ingredients
4 medium Russet Potatoes, washed skin on diced
1 Tbsp. olive oil
3 Tbsp. grated parmesan cheese
2 tsp. dried parsley
1 tsp. paprika
1/2 tsp. garlic powder
1 tsp. salt
1/8 tsp. cayenne pepper
Directions
Preheat oven 450 degrees. Spary sheet pan with cooking spray. Slice potatoes in half then cut into half inch cubes. Place potatoes in a medium bowl and toss with oil. Combine parmesan, parsley, paprika, garlic powder, salt, and cayenne pepper in a small bowl. Add Parmesan mixture to potatoes. Toss to coat evenly. Arrange Potatoes on baking sheet. Bake, turing once until potatoes are lightly browned and easily pierced with a knife, about 25 min.

ReplyDeleteThese were delicious! I used a small bag of baby red potatoes (halved or quartered), and served them with salisbury steak for a really nice mid-week meal. Thanks for posting!

Hmmm. I'm vegan/lactose intolerant, so I'll probably look for something instead of cheese, but this recipe does sound totally yummy. I have never found a really great potato recipe, but I think this may be it! Thanks. -Lola from Et tu, Tofu
