Apple Fritter Rings

To be completely honest, I haven’t tried this recipe. I found it in 2001 Taste of Home Annual Recipes. But what’s not to like? It sounds decadent enough to serve for a special occasion.

Ingredients
5 large, tart apples, peeled, cored, and cut into ½” rings
1 tsp baking powder
½ tsp cinnamon
1 egg
1 C all-purpose flour
2/3 C milk
A dash of salt
¼ C + 2 Tbsp sugar
1 tsp vegetable oil
1 ½ C vegetable oil (for frying)

In a bowl, beat egg, milk, & oil. Combine flour, sugar, baking powder, & salt; stir in to egg mixture till smooth. (Batter will be thick.) Peel, core, & cut apples into 1/2" rings. In an electric skillet or deep-fat fryer, heat oil to 375 degrees Fahrenheit. Dip apple rings into batter & fry, a few at a time, until golden brown. Drain on paper towels. Combine sugar & cinnamon; sprinkle over hot fritters.

Serve warm
