Oh Boy Salad!



INGREDIENTS 
1 cup tomatoes, chopped or sliced
1 cup cucumber, peeled, pared, chopped
1 tsp dill weed, dried
1 tsp light mayonnaise

DIRECTIONS 
Using equal proportions of tomato and cucumber, chop everything up into small bits. Sprinkle with dill, or any seasoning of your choice. Add a spoonful of light mayo and stir until everything is well mixed. You can also use ranch dressing if you prefer.

Serve immediately, or after chilling. It generally lasts a few days in the refrigerator, so it can be made ahead of time. Enjoy!

Note: I vary the recipe by dicing in a few other fresh veggies (such as bell pepper or celery) and adding or substituting other spices and herbs.

I found this recipe on SparkPeople, which is a free website packed with information about living a healthy lifestyle. There are online exercise videos, message boards, and communities for folks with similar interests or challenges. You'll find articles on motivation, diet & weight loss, exercise, and conditions such as diabetes, high blood pressure, heart disease, and other chronic health problems. You can track your daily food intake and run a report at the end of the day that tells you whether you're meeting (or exceeding) dietary recommendations for calories, fat, protein, potassium, and other nutrients. You can find great recipes there, or submit your own recipes and analyze their nutritional content.

Since I began using SparkPeople in August, I've lost over 25 pounds and have gone from being out of breath when I walk around the block to being able to survive an hour of water aerobics followed by a brisk walk on the track and using the Nautilus machines at least three times a week. I even tried my first Zumba class this past weekend - and it was a blast! Tough, but a ton of fun!
