4 C cooked chicken, cut into ½” cubes
1 C walnuts, toasted & chopped

1 rib (~ 1 C) celery, diced small
2 Tbsp chopped shallots (or more to taste)
1 C dried cranberries
2/3 – ¾ C mayonnaise
3 Tbsp champagne vinegar (or can substitute tarragon vinegar or white wine vinegar)
2 Tbsp fresh tarragon (or substitute another fresh herb of your choice)
½ tsp salt (may adjust to suit your taste)
½ tsp pepper (may adjust to suit your taste)
Dump it all together & combine ingredients. Refrigerate for several hours to allow flavors to "marry".
Serving suggestion: Serve with toasted pocketless pita wedges or atop Romaine wedges.
Can also use leftover Thanksgiving turkey and chopped pecans.
