A cooling & nutritious summer salad

Ingredients
Beans, black, , 1 can, drained
Yellow Sweet Corn, 1 can, drained
Red Ripe Tomatoes, 1 medium, chopped fine
Onions, raw, 1/2 cup, chopped fine
Avocados, 1, cubed
Lime Juice, 4 Tbsp (adjust to your taste)
Olive Oil, 1 1tsp (optional)
Cilantro, raw, 4 Tbsp, chopped fine


Mix ingredients together & chill for 2 hours, then adjust with lime juice, salt and pepper to taste.

This is really good, and less than 200 calories per serving1

  9. I love getting fresh produce and mixing up salads in the summer. My favorite is tomatoes, I could just eat them right from the garden like apples.

  26. What a great looking salad! I would try. Imagine that the addition of fruits, nuts and lean meat to this salad to make a great low-calorie, healthy food of high nutritional value.
