A Facebook friend shared this recipe with me, and it was a hit when I tried it with some friends! I'm sharing it at Full Plate Thursday.
Ingredients
1 lb Asparagus (medium to thick stalk)
1 tsp. Thyme
1 tsp. Basil
1 tsp. Oregano
1 tsp. Parsley
16 oz. Cream Cheese
1 lb thinly sliced Prosciutto (about 30 slices)
Garlic Powder to taste
Salt and Pepper to taste
Start a pot of water to boil. In another dish prepare an ice water bath. Find the natural snap point of the asparagus and snap off the tough ends of each piece. (If you're Type A, trim to make all of them even in size. I'm not quite that Type A.)
Place asparagus in boiling water. Let them stay in the water for about 3 minutes or less; you don't want them limp. Pull them out and put them directly into the ice bath. Keep them in just until cool, and then dry them on a paper towel.
Combine the herbs, cream cheese, garlic powder, and salt and pepper in a shallow bowl. Using the back of a fork smash and mix all the ingredients together. Incorporate the herbs well. The cream cheese should be soft and spreadable.
Gently lay out several pieces of prosciutto. Carefully spread about a tablespoon of cheese on the ham. Place a spear of asparagus with the tip exposed and roll it up.
