A must-try four bean salad


Yes, I'm serious. I've never been a fan of bean salads, but a friend brought this to a cookout last weekend and several of us - myself included - were delighted when she gave us the recipe. So I pulled out my measuring cup (and the camera, of course... any excuse to take a picture lately...) and made a batch for our table, and to share at Dr. Laura's Tasty Tuesday, Real Food Wednesday, Tasty Thursdya, and What I Made.

Here's the recipe:

FOUR BEAN SALAD
15 oz.can wax beans
15 oz. can red kidney beans
15 oz. can chick peas
15 oz. can green beans
1 med. onion, chopped
1 green pepper, chopped

Drain beans and peas and mix together in a large bowl with onion and pepper.


Mix all dressing ingredients together and pour over bean mixture.
Dressing:
1/2 cup sugar
2/3 cup red wine vinegar
1/2 cup oil
1 tsp. salt
1 tsp. pepper
1/2 tsp. Worcestershire sauce
Chopped parsley
Even the dressing is pretty!

Marinate in refrigerator for at least 24 hrs., stirring a few times. Serve with a large slotted spoon.

  4. It's your NC friend... remember your scallops post and your nice comments about my kale chips! I'm still swimming in greens and made more kale chips today. This bean salad looks good... I, too, would not normally go for this but it looks like a great pick for a potluck and to try!
