Today's recipe: Forgotten Cookies



This recipe was a rare treat when I was growing up. Everyone had to cooperate in making these cookies a success, because the oven couldn't be opened - even to peek - for 24 hours... Thus the name, "forgotten cookies". But they were worth the sacrifice!

Forgotten Cookies:

Ingredients
2 egg whites
1/4 tsp salt
1 tsp vanilla
3/4 C superfine sugar
6 oz chocolate chips (mini chips preferred)

Make on a clear dry day. Set oven to 375 degrees Fahrenheit. Sprinkle salt on egg whites & whip until they mold to soft peaks. Add vanilla & beat in sugar 1 Tbsp at a time. Keep beating until very stiff. Fold in chocolate chips.

Drop mixture by tablespoons onto greased cookie sheets, making small mounds. Place in preheated oven & SHUT OFF OVEN IMMEDIATELY. Leave in oven - WITHOUT PEEKING - for 24 hours.

  2. OOOH, my Mom makes these around Christmas time, but they were never called such a cool name as "forgotten cookies"- I like that way better! I remember my brother and I waiting and waiting for them though- thanks for the walk down memory lane :)

  3. Oh my this is the kind of cookies that kids do love because they could be antsy and wondering why it takes too long for the cookie to be done, lol!! Good treat for everyone.
